PERSONE NYC, a leading name in high-end hospitality recruitment, is seeking an exceptional Executive Chef for an upcoming flagship restaurant launch in Chelsea, Manhattan. This exciting venture, opening in October 2025, is backed by a highly successful international hospitality group renowned for luxurious restaurants and beach clubs that blend Mediterranean-inspired cuisine, vibrant social energy, and a celebratory ambiance.

The restaurant will feature 220 seats, an energetic bar area, and a distinctive late-night atmosphere with dim lights, DJ sets, curated cocktails, and a social, festive vibe. The culinary program will be 80% brand-rooted French-inspired dishes drawn from the group’s global portfolio, and 20% chef-driven creations influenced by NYC’s local and seasonal produce, allowing creative freedom and innovation. The selected chef will also undergo immersive training in Europe ahead of the opening to align with the brand’s philosophy.

The Executive Chef will lead the pre-opening phase, overseeing kitchen setup, menu execution, and team recruitment. This role demands a leader who excels in operational discipline, creativity, and team building, ensuring both culinary excellence and smooth kitchen operations. The chef will work closely with the Corporate Executive Chef, ownership, and front-of-house leadership to deliver a seamless and memorable guest experience.

Key Responsibilities:

  • Lead all kitchen operations for the pre-opening and launch phases.

  • Curate and execute menus that balance French techniques with seasonal, NYC-inspired creativity.

  • Ensure precise food quality, presentation, and consistency.

  • Recruit, train, and mentor a full kitchen brigade.

  • Maintain strict DOH compliance and high sanitation standards.

  • Manage budgeting, ordering, inventory, and cost control.

  • Collaborate with front-of-house leadership for a unified dining experience.

  • Adapt menu offerings to evolving guest preferences, including plant-based and gluten-free options.

Requirements:

  • Proven track record as an Executive Chef in high-volume, high-end dining environments.

  • Experience with multiple NYC restaurant openings highly preferred.

  • Expertise in French and seasonal cuisine with a willingness to incorporate global influences.

  • Strong organizational and leadership skills with the ability to operate in a fast-paced, high-pressure setting.

  • Knowledge of operational systems, cost control, and kitchen management best practices.

  • International culinary experience is a plus.

  • Interest in nightlife culture and integrating energy into the dining experience.
