Description:
Eagle Oaks Country Club, recognized as one of the finest country clubs in New Jersey, is seeking a Cold Food Preparation Cook to join their esteemed culinary team. The cook will be responsible for preparing cold and some hot products according to the club's standard recipes. This role will also include maintaining the inventory of all dressings and vinaigrettes needed for both á la carte and banquet departments.
The successful candidate will be part of an upscale culinary environment, with responsibilities that include preparing appetizers, hors d'oeuvres, cold sauces, jellies, stuffing, salads, and sandwiches. You will also be tasked with ensuring the cleanliness and safety of your work area and maintaining high sanitary standards.
Key Responsibilities:
Prepare cold food items according to the club's menu standards
Slice and pre-portion cold cooked meats, fish, and poultry
Prepare appetizers, hors d'oeuvres, relishes, cold sauces, and dressings
Requisition necessary food supplies
Maintain high sanitary standards in compliance with state and local health regulations
Notify Sous Chef of expected shortages
Store reusable leftover products safely and cleanly
Attend staff meetings and assist the Sous Chef and Executive Chef with other duties
Qualifications:
Must be 18 years of age or older
Some culinary work experience
Minimum 3 years of experience in culinary preparation
Knowledge of basic culinary fundamentals
Ability to prepare cold food items for the club’s menus
Food safety certification preferred
Physical Demands and Work Environment:
Required to stand for long periods, climb stairs, bend, stretch, and reach
Must be able to lift up to 50 pounds
Work in a hot, humid, and noisy environment
